We have found our cheesecakes bake much better in this pan, rather than a springform pan. And they are easier to plate than a springform pan.

These are the hands down best cheesecake pans ever. I have gradually acquired them in multiple sizes and have never had a problem with any of them. The springform pans eventually leak and/or deform, and these never do. 5 stars (at least) for the pans.
My only problem with these is the labels. The pan itself comes with what I assume is a manufacturer's label. That one removes quickly, easily and completely, which I suppose means the manufacturer realizes that their customers don't want permanent labels on their shiny new pans. So why do these pans always have a bar code label that has to be soaked, scrubbed, scoured and picked at, and still seems to leave unattractive goo marks?

Fat Daddio's PCC-123:: Description

This versatile deep professional cake pan has a removable bottom and is designed for baking a variety of layer cakes and wedding cakes, as well as cheesecakes and frozen desserts. Similar to a springform pan, the cake can be removed from the pan simply by pushing the bottom of the pan up and removing it. Unlike a springform pan, there is no buckle or clip to unfasten, and the one-piece design holds its shape longer than a springform pan. Straight sides produce professional-looking cakes with straight edges, essential for layering and decorating ease. The pan's uniform wall thickness results in an even rise and the elimination of hot or cold spots in cakes. The anodized aluminum pan won't discolour and provides excellent cake release and clean up. A ¼" round rim makes it easy to lift and move the pan without disturbing the contents. Made from a premium hardened 16 gauge aluminum alloy which has been anodized to ensure superior durability.
